As part of the ongoing design of the public areas at Gleneagles, a brief for a less formal dining offer was given to Sedley Place as part of the new Spa redevelopment. The requirement for the interior was to reflect the style of offer embodied in the new brand name 'Deseo' meaning 'whatever you desire'.

Our insight was to create a design which has the 'emporium' at its heart - a food hall/deli/working kitchen environment in which diners are encouraged to join in the celebration of fresh produce and its preparation. Carefully designed seating areas and lighting promote a constantly changing mood to vary the dining experience.

Deseo is loved by hotel guests and, since launch, has continued to out perform its business plan.
